1. Take-Out Style Vegetable Fried Rice

Ingredients:

  • 2 cups of white rice
  • 2 big scrambled eggs
  • 3 cups of mixed veggies (carrots, bell peppers, onions, broccoli, etc.)
  • 4 chopped scallions
  • ½ cup of frozen peas
  • 1 tablespoon of peeled and grated ginger
  • 1 tablespoon of minced garlic
  • 2 tablespoons of toasted sesame oil
  • 1¾ cups of chicken broth
  • ¼ cup of soy sauce

Note: The ingredients listed are for a 5.5-cup cooker. You should double the ingredients if you’re using a 10-cup cooker.

Steps:

  1. Put the washed rice and water in the inner pot, then place it in the rice cooker.
  2. Mix the veggies, scallions, ginger, garlic, sesame oil, chicken broth and soy sauce in a bowl.
  3. Pour the mixture on the rice, but don’t mix them yet.
  4. Set the timer to 50 minutes after selecting the [Mixed] option. Then, press the [Start] key to begin.
  5. After the rice has finished cooking, mix in the scrambled eggs and frozen peas.
  6. Close the lid and leave it aside for 15 minutes or until the peas are fully cooked.

2. Reunion Treasure Rice

Ingredients: 

  • 2 cups of rice
  • 3 cups of water
  • 2 tablespoons of soaked and chopped dried shrimps
  • 30 g of cubed vegetarian char siu
  • 3 pieces of cubed arrowroot head (ngaku)
  • 2 soaked and diced dried mushrooms
  • 12 pieces of shelled ginkgo nuts
  • 50 g of diced carrot
  • 2 to 3 tablespoons of sesame oil
  • 1 tablespoon of oyster sauce
  • 1 tablespoon of light soy sauce
  • tablespoon of thick soy sauce
  • ¼ teaspoon of sugar or according to taste
  • 1 tablespoon of TUMIX Chicken Stock Seasoning

Steps:

  1. Heat the sesame oil in a wok and sauté the dried shrimps until fragrant. Add the carrots and mushrooms. Sauté until well cooked.
  2. Place the rice, ginkgo nuts, and arrowroot head in the pot.
  3. Combine and stir all of the seasonings until they are well fried.
  4. Place the dish in an electric rice cooker.
  5. Press the start button to begin cooking. When the rice is done, mix it with the vegetarian char siu.

3. Indonesian Chicken Porridge

When the night is cold, you’d want to have comforting food as you catch up with your loved ones. Try out this porridge recipe that is considered a comfort meal in Indonesia!

Ingredients:

  • ½ cup of rice
  • 2 cups of chicken stock
  • White pepper and salt (for flavour)
  • 1 chicken breast
  • 1½ oz of peanuts
  • ¾ oz of fried onions
  • Green onion and cilantro (for garnish)

Note: The ingredients listed are for a 5.5-cup cooker. You should double the ingredients if you’re using a 10-cup cooker.

Steps:

  1. Wash the rice in the inner pot and drain the water. Then, season the rice with salt and white pepper. 
  2. Pour in the chicken stock until it reaches the 0.5 mark on the inner pot’s “Porridge” level. Add some water if the chicken stock does not reach the 0.5 level. Mix all of the ingredients well.
  3. Select [Porridge] from the menu and set the heating duration to 60 minutes. Press the [Start] button to begin.
  4. Cook the chicken in boiling water. Tear the chicken into pieces by hand once it’s been cooked.
  5. Cut the green onion and cilantro into small pieces.
  6. When the porridge is done, transfer it to a serving bowl and top with the chicken and chopped green onions and cilantro.
