3 Best Malaysian-Made Air Fryer Recipes To Start Off A Festive New Year Dinner

1. Chicken Satay with Dipping Sauce
Ingredients for the Chicken Satay:
- 2 ½ pounds of boneless and skinless chicken thighs (cut into 1-inch pieces)
- 3 tablespoons of coconut aminos
- ¼ cup of coconut milk (full-fat)
- 1 tablespoon of fish sauce
- 3 minced garlic cloves
- 1 tablespoon of finely grated ginger
- 1 ½ teaspoons of ground turmeric
- ½ teaspoon of ground coriander
- ½ teaspoon of ground cumin
- 2 teaspoons of curry powder
- Salt and ground black pepper to taste
Ingredients for the Dipping Sauce:
- 5 cups of hot cooked rice
- 1 teaspoon of cayenne pepper
- ½ bunch of cilantro sprigs
- 2 minced garlic cloves
- ½ cup of teriyaki sauce
- ⅓ cup of cashew butter
- 3 tablespoons of orange juice
- 2 tablespoons of chopped raw cashews (Optional)
Steps for the Chicken Satay:
- First off, mix the coconut milk, coconut aminos, fish sauce, garlic, ginger, turmeric, coriander, cumin, curry powder, salt and pepper in a gallon-sized resealable bag.
- Squeeze out the air from the bag as you add in the chicken pieces. Next, gently press the chicken pieces until they are entirely coated with the marinade. Refrigerate for around 4 hours to 24 hours while occasionally turning the bag.
- Preheat your air fryer to 200°C.
- Thread the chicken pieces onto each skewer and set them on the skewer accessory rack.
- Place the rack in the air fryer basket and air fry the chicken pieces for 8 minutes. Make sure to turn each skewer carefully while cooking. Next, cook for another 8 minutes and repeat with the rest of the chicken.
- Put an instant-read thermometer into the centre. If it reads 74°C, then the satay is finished!
Steps for the Dipping Sauce:
- Mix the cayenne pepper, garlic, teriyaki sauce, cashew butter and orange juice in a small bowl. Then, refrigerate it while it’s tightly covered until you are ready to serve.
- Sprinkle the chopped cashews on top of the dipping sauce. Then, place the chicken satay on top of the hot cooked rice along with the dipping sauce. Garnish with cilantro sprigs, and enjoy your chicken satay!
2. Ayam Goreng Berempah
Ingredients:
- 1 tablespoon of vegetable oil
- 2 whole chicken legs (with skin)
- 5 cloves of garlic
- Small piece of ginger
- 2 lemongrass (the white end part)
- 2 tablespoons of meat curry powder
- ½ teaspoon of turmeric powder
- 1 teaspoon of salt
Steps:
- Firstly, pound the ginger, garlic and lemongrass together until they form a rough paste.
- Cut deep slits in the chicken legs for even marination and cooking. Then, pat it dry and place it in a bowl. Mix it with the rough paste and the other ingredients, and marinate for 2 hours or overnight.
- Place a piece of foil at the bottom compartment of your air fryer for easy cleanup. Then, preheat the air fryer to 200°C for 5 minutes.
- Place the chicken with the skin side up. Next, baste some oil over the top of the chicken. Make sure to also include the rough paste from the marinade.
- Cook for 10-12 minutes in the air fryer. Then, lower the temperature to 180°C and air fry for another 5 minutes.
- Flip the chicken over, baste with some oil, and air fry for another 10 minutes. After you are done, allow it to cool, and enjoy!
3. Portuguese Egg Tart
Ingredients:
- 1 egg
- 2 egg yolk
- 150ml of whipping cream
- 75ml of full cream milk
- 45g of caster sugar
- Vanilla extract
- Frozen puff pastry sheets
- Egg tart mould
Steps:
- Thoroughly mix the egg, egg yolk, whipping cream, full cream milk, caster sugar, and a pinch of vanilla extract in a mixing bowl. The mixture will be the filling for the egg tarts.
- Cut out the circular puff pastry slice with a round cup.
- Next, place the pastry slice in the egg tart mould. Press the pastry lightly.
- Fill the pastry mould with the filling. Try not to overfill them.
- Bake the egg tart in an air fryer for 20 minutes at 180°C.
- Once they are done, allow them to cool down before eating them.
