Ingredients:

  • 1 medium baguette (crusty basic baguette is best)
  • 6 medium fresh tomatoes
  • 4 tbsp olive oil (set aside additional oil for brushing on bread)
  • 4 cloves of garlic (3 minced and 1 to rub on bread)
  • 2 tbsp of fresh basil (sliced thin)
  • 2 tbsp of balsamic vinegar
  • 1 tsp of salt
  • ¼ tsp of red pepper flakes (optional)

Steps:

  1. Mince 3 garlic cloves and set aside. 
  2. Add 4 tbsp olive oil in a pan over medium-low heat. Once heated, add the minced garlic cloves and cook until fragrant. Remove the pan from heat and let the oil and garlic cool.
  3. Meanwhile, dice the tomatoes and slice up the basil into thin pieces. Combine tomatoes, basil, vinegar, salt, and red pepper flakes into a bowl and toss. 
  4. Then, add the garlic and oil and toss again. Cover the bowl and marinate in the fridge for a minimum of 30 minutes.
  5. Preheat your air fryer at 375°C for 3 minutes. 
  6. Cut the baguette into slices. Rub the top of each bread slice with garlic and brush with olive oil.
  7. Air fry the bread for 3-4 minutes and top each slice with the tomato sauce. Sprinkle some red pepper flakes.
  8. Serve and enjoy your lovely bruschetta.

2. Steak and Roasted Potatoes

  3. Next, place your flank steak into a pan and coat the top with 1 tbsp of oil, balsamic vinegar, and salt and pepper to taste.
  4. Place your steak on the top level of the air fryer oven and the potatoes on the centre level. Cook the steak at 300°C for 5 minutes, flip and cook for five more minutes. (Add more time if you or your partner prefer well-done steak!)
  5. Remove the steak and potatoes from the air-fryer oven.
