1 medium zucchini |
1 clove garlic |

4 ripe plum tomatoes |

1 c. part-skim ricotta cheese |
1/4 c. freshly grated Pecorino Romano cheese |
4 ox. fresh mozzarella cheese |
Steps
1. Preheat toaster oven to 450 degrees F.
2. Toast bread 5 to 10 minutes (until golden)
3. Combine all (zucchini, garlic, oil) into a microwave-safe bowl.
4. Microwave on High 4 minutes, stirring once. Add tomatoes, 1/4 teaspoon salt, 1/4 teaspoon freshly ground black pepper.
5. Cover with vented plastic wrap and microwave on High 3 minutes.
6. Thinly slice basil leaves (reserve 2 tbsp for garnish). In small bowl, combine basil, ricotta, Romano, 1/8 teaspoon salt, 1/4 black pepper.
7. Spread one-forth of ricotta mixture evenly among bread slices; top with mozzarella.
8. In single layer on foil-lined toaster oven tray (working in batches it necessary), bake toasts 8 – 10 minutes or until heated through and mozzarella is melted and lightly browned. Garnish with reserved basil.

#2 Baked Chicken Wings
This dish is perfect for a late afternoon snack or even supper. It can also be served as a dish during lunch or dinner accompanied with some white rice and vegetables.

4. Wash and throughly dry kale with a salad spinner. Drizzle kale with olive oil and sprinkle with seasoning salt.
5. Bake until the edges brown but are not burnt, 10-15 minutes.
